Traveling the world had its appeal, but she had her sights set on something more than modeling. She tried a little of everything, from mechanics to cooking. Today, with degrees in pastry and culinary arts management, she's the owner of Ella's Bakehouse. Building upon her love of food and on screen abilities, she's become one of the most recognizable chefs on British television. Lightening things up for her American debut, her newest cookbook "Lighter Way To Bake" (Ecco, $29.99), arrives in stores March 18.

Pascale, 41, lives in London with her daughter, Ella, 17. She spoke with us by phone during a recent visit to New York.
Q. What first inspired your love of cooking?
A. As a kid, my parents split up. I'd go to my dad's for the weekend, and he would cook the most amazing Italian food. My father is a language teacher. He speaks about 10 languages, loves traveling, and he could cook the most amazing pastas.
Q. Was baking always an interest?
A. It did come after modeling. I used to live in New York. I lived here for about 6 years and worked here. I was modeling and traveling all over the world. Then I got married and had my daughter Ella.
I wasn't modeling much. I was looking for things I was passionate about. I enrolled in many different courses, from car mechanics to hypnotherapy to find something. Then I enrolled in the year long Cordon Bleu course. I fell in love. Even though my book is baking, my training is in everything. Baking is magic that happens in the oven.
Q. What do you want American audiences to know about you?

Q. How did you get started making cakes professionally?
A. Selfridge's was in need of a Christmas cake supplier. Marco Pierre White, he introduced me to the food manager at Selfridge's, and I made a whole lot of Christmas cakes, decorated them and packaged them. Hundreds. That was my first gig.
Q. What did you learn from that experience?
A. Fruit cakes, if you use apple juice or rum, they last a long time. With other cakes, like fresh cakes, you need to make them as close as possible to when you eat them. Especially with lighter cakes, because they don't have as much fat and sugar that act as preservatives.
Sponges actually do dry out in the oven, so best to keep them in a cool, dry place, but not the fridge.

A. Yes! When I do my TV shows, I often wear a plain white shirt, but people don't realize I have like 12 of them. I make a mess, change into the next one. I feel restricted in aprons.
Q. You've recently started making juices every morning?

I love my new juicer. I normally have a juice, maybe some oatmeal or I love poached egg, basil, tomato. I'm a low carb kind of gal for sure.
Q. How did you start cooking on television?

I've done three programs: "Baking Made Easy," "Fast Fresh and Easy" and a Christmas special. And I've just filmed another one. Only the first one focused on baking. This new one is going into people's homes.
Q. You also just hosted your first reality cooking program in Britain?
A. "My Kitchen Rules," a format coming from Australia, their highest rated show. Six couples, we go to their home, and they cook a meal for the five other couples, myself and Jason Atherton, a Michelin starred chef. It was great to be out of the kitchen, this was my first time being a judge and a host.
